Sharp instruments make your work easier. Not only are fewer strokes required, less force is needed to remove the deposits and plane the root surfaces.
Fewer strokes using less force reduces fatigue. When you are fatigued, you start to lose control. When you loose control you increase the risk of slipping which leads to an increased risk of tissue laceration. I never had a patient thank me for lacerating their gingiva.
Less force means more comfort for both you, the operator, and the patient. Additionally, when using less force, the patient perceives you are in control of the procedure. The perception of quality care goes up, and it should because it does!
Finally, in simple terms, you elevate the quality of the service your provide. Calculus removal is better and root planing is more thorough with sharp dental instruments.
